Click the font name in the black bar at the top of the screen, type in the name of a font, it will become the main font and will be remembered for the future. If that doesn't work, please let me know.
We create some hidden elements and measure them before and after changing their font-family. It turns out that this isn't a new idea.
Just a couple of keyboard shortcuts: control-b = bold, control-i = italics
Firefox 2+, Safari 3+, IE7+. OS/X a fair bit nicer than Windows.
